Beef Stroganoff

About 2 1/2 hrs cooking time. Makes (unknown) serves, video here

Ingredients

  • 1 kg diced chuck beef

  • 1 entire garlic

  • 1 diced brown onion

  • 400g mushrooms sliced

  • 2 tbsp tomato paste

  • 1 cup red or white wine

  • 1 1/2 cups of beef stock

  • Salt & pepper to taste

  • Olive Oil

  • 1-2 tbsp dijon mustard

  • Butter

  • 1 tbsp plain flour

  • Thyme

  • 2 tsp smoked paprika

  • 200g sour cream

  • Parsley to serve

Directions

  • Put beef in a mixing bowl. Add pinch of salt salt, pepper and tbsp plain flour. Mix with hands

  • Heat large pan, add butter and wait to melt/foam

  • Add mushroom, garlic & onion together. Cook till soft/translucent. Remove into a bowl

  • Add oil & beef to pan, cook till browned

  • Add mushroom and onion to beef, stir

  • Add paprika, stir

  • Add wine and thyme, cook off alcohol

  • Add tomato paste, stock and mustard

  • Simmer for around 2 hours with lid on, stirring occasionaly. Cook till the beef starts falling apart.

  • Add sour cream about 5 minutes before taking off the heat

  • Serve with rice, mashed potatoes or pasta

  • Garnish with parsley
