Ingredients

  • Punnet of blueberries

  • Butter

Directions

  • Cook the pancakes in some butter

  • Add some whole blueberries into wet batter when cooking

  • Put sauce on it and eat

Pancakes

Ingredients

  • 1 cup self raising flour

  • Salt

  • 1 tsp bicarb soda

  • 3 tbsp sugar

  • 1 Egg

  • 3/4 cup milk

  • 1 tsp vinegar

  • 1 tbsp melted butter

  • 1 cup blueberries

Steps

  • In a bowl put in a pinch of salt, flour (through seive), sugar & bicarb soda

  • Mix together, add egg into a well in the middle

  • In its own bowl, add vinegar to milk and slowly mix with dry ingredients

  • Add butter and mix

Blueberry Sauce

Ingredients

  • 250-300g butter

  • 1 tbsp sugar

  • 1 tsp vanilla essence

  • 1 cup water

  • 1 tsp lemon zest

  • 1 tbsp lemon juice

  • 2 punnets of blueberries

Steps

  • Heat a skillet to medium

  • Put blueberries in pan

  • Add water till blueberries are surrounded, not swimming

  • In a cup, add corn starch and ass soe cold water and stir till it dissolves

  • Add sugar to now boiling blueberries

  • Add vanilla essence, lemon zest & lemon juice

  • Simmer on low & stir gently cook for around 5 mins

  • Slowly add corn starch mix to sauce

  • Cook until its as thick as you want. It will thin as it cooks
